Last Sunday we decided to do a nice home cooked Sunday supper and invited hubby’s parents over for dinner. It was a busy weekend filled with lots of activities – Oktoberfest on Friday night, picking pumpkins at Bates Nut Farm pumpkin patch on Saturday, the South Park walk-about and drinks with friends at Station in South Park Saturday night, and the Coronado Fire Department Open House / festival earlier in the day on Sunday! Needless to say, with all the activities, I wanted something somewhat simple that didn’t compromise taste for time. I decided to do a vegetarian lasagna and was very pleased with the outcome.

A few changes I made as recommended by other people who had commented on the recipe was to substitute olive oil for the cooking oil, and to add some additional vegetables – red pepper and zucchini – and also to use fresh basil instead of dried! The outcome was absolutely delicious! It was also a relatively simple meal to prepare and combined with a green salad, garlic bread and a little pinot noir that paired extra nicely with the red sauce, it was the perfect way to close out the weekend!
